FISHING WEATHER CONTINUES TO HAUNT DUCK HUNTING
The end of this week marks the end of the 2019/2020 duck season here in Southwest Louisiana. So far this season I would rate it about an 8. Some weeks and some blinds were just fantastic and go back to the same blind the next day and the word SLOW was a good description. Our marshes still have plenty of ducks that just are not flying. Our blue bird weather and full moon seems to be the answer. Our hunters harvested over 750 duck this past week with lots of Canvass Backs and Pintails brought to the taxidermist and pickling house.

REDFISH CONTINUE TO COME TO THE CLEANING TABLE FROM CLEAR WATER
Weather permitting our early morning duck hunters returned to the lodge, had some gumbo and headed to the lake looking for some line stretching, tackle busting redfish for the grill. Captain Raini and his crew smacked a limit of redfish along the ship channel where the old river meets up. Live Bait is still available at Hackberry Fishing Camp daily. The big bulls are still for the taking in the clean water at the big jetties fishing on the bottom with cracked crab and cut mullet.

Many of you have asked how to cook all of the Redfish that we have been he catching here at the lodge, along with delicious redfish fillets the very meaty Redfish throats are very tasty. I like to grill them with a cold beverage but they can be prepared in a number of ways. Pan fried, oven baked, or sautéed. Use your imagination when it comes to your favorite spices.

Here is the way I like them. Check it out
Using heavy duty aluminum foil form a little shallow pan for the grill. Coat with spray Pan so the throats won’t stick. Over a medium hot grill place the throats in the foil boat and cooked covered until done. About 10 or 15 minutes. Make a sopping sauce of melted butter, salt, pepper, minced garlic, lemon juice and anything else you like. Sop the sauce over the throats a couple of times during the cooking process, Serve Hot of the grill. Enjoy
